Healthy Apple Chia Crumble with Maple Cashew Drizzle (vegan, gluten-free)

I got the itch to bake the other night and, feeling the excitement of fall coming soon, I decided to try my hand at making something cozy, warm and delicious from scratch. This yummy dish is what a came up with! It is vegan, gluten-free, low sugar, and refined-sugar free!

Ingredients:

FOR THE CRUMBLE:
1 apple
1 Tbs lemon juice
1 Tbs cinnamon
1/2 tsp nutmeg
1/4 tsp cardamom
1 Tbs chia seeds
1 Tbs coconut sugar
1/4 coconut flour
1 cup gluten-free oats
1/2 cup non-dairy milk
5 Tbs melted coconut oil (measured when melted)

FOR THE DRIZZLE:
3 heaping Tbs cashew butter
2 Tbs pure maple syrup
1 Tbs melted coconut oil

Directions:
Peel the apple and cut into small chunks. Put in bowl, squirt lemon juice over top and set aside. Combine cinnamon, nutmeg, cardamom, chia seeds, and coconut sugar in small bowl. Add mixture to apples and mix well to coat apples thoroughly. In a separate large bowl, combine the oats and coconut flour. Add apple mixture and mix all together. Slowly add in melted coconut oil and non-dairy milk, stirring as you do so. When well mixed together, transfer to lightly greased baking dish and bake at 325 F for approximately 20-25 minutes. When the crumble is almost done baking, make the drizzle by heating and stirring the cashew butter, maple syrup, and coconut oil together until it is drippy and runny. Once crumble is done baking, drizzle sauce over top and enjoy!
